Norma’s Keto in a Coulee Progress

Hello Week Four!  So I am absolutely loving this keto lifestyle, and I am so happy to blog my progress to share with all of you.  It definitely helps me with accountability issues as well as keeping me motivated.

I am going to be doing something a little bit different this week and adding in my current book that I am reading to share my initial thoughts with all of you.  

Highlight of my week – Today (Saturday) I had the pleasure of spending the whole day with my hubby!  We went into the city and did some shopping, went for lunch, and purchased some new prescription sunglasses for him that he was so desperately needing because of some  health issues.  He is going to look so good wearing those new sunglasses!

I am about halfway through the book and right away this book grabbed my attention and is definitely holding my interest.  I am really enjoying the authors writing style and the storyline.  The characters are all quite compelling to read about and I am really looking forward to seeing how the rest of this story unfolds.   This novel is definitely an impressive read and has been able to invoke quite a few different emotions from me.  I have a feeling that this is going to be a 5 star read from me!

Norma’s Dinner Journal

Keto Chili

I eat my breakfast and a lunch, which usually consists of the same thing everyday so I thought I would only include my dinners in my food journal below.

Sunday – Keto Chili.  Our family rating 10/10 (Simply Keto cookbook).  This is the second time that I have prepared this dish.  It is so easy to make and is extremely tasty.  

Monday – Mary Brown’s Chicken 

Raspberry Cream Cheese Fat Bombs.  (Simply Keto cookbook) 10/10.  These are such a big hit that I made them again this week!  The little bits of raspberries in these fat bombs was beyond amazing.  My tastebuds were jumping for joy after eating these little morsels of pure heaven! 

Tuesday – Breakfast for dinner tonight.  Bacon, eggs, fried mushrooms & avocado slices.  This is probably one of my favourite easy and quick meals to make when I’m in a hurry.  I know that it isn’t all that creative but it is a tasty one!

Wednesday – Fish and cauliflower.

Thursday – Grilled Parmesan Garlic Wings.  Family rating 10/10 (Simply Keto cookbook).  Oh my goodness these were so darn tasty and was a huge hit with my whole family.  I think I said yum with every mouthful.  The recipe called for chicken wings but I didn’t have any so I substituted with chicken drumsticks and instead of grilling I baked them in the oven.  Will be definitely making this recipe again!

Friday – Fried chicken drumsticks, beef garlic sausage, broccoli & cheese bites & creamy mashed cauliflower.  This meal was extremely tasty too.

Saturday – Mary Brown’s Chicken.  I am kind of obsessed with Mary Brown’s Chicken and whenever we go into the city that is usually what I pick up to eat to bring home for dinner.  And, yes I eat the skin! LOL

Fried Chicken Drumsticks

So I have gotten up a little earlier everyday to prepare my Rocket Fuel Latte every morning to take to work with me.  I am not all that much for coffee but I am definitely loving this drink and look forward to having it every morning.  If anyone is interested in the recipe that I use (I kind of tweak it a little bit from the original recipe in the book) just drop a comment below and I will be sure to add the recipe next week.

Norma’s Stats:

  • Weight:  ⬇️0.4 lbs
  • Start Date:  October 20, 2018
  • Sleep:  I don’t know my insomnia is still no better and it definitely is very frustrating to me.  I just wish that I could sleep. I’m extremely tired of not sleeping!  The good thing though is that I do rest throughout the night and for some reason my body is able to function the next day without actually feeling all that fatigued.
  • Energy Level:  My energy level is actually very good and I am happy with the way that I am feeling.
  • Difficulty Level:  Easy and I am not getting frustrated at all.  I am actually enjoying looking through my cookbooks for new recipes to try.  The Simply Keto cookbook by Suzanne Ryan is my favourite right now.  The recipes are actually really good and very similar to my families tastes.  
  • Goals:  Drink more water!  Only weigh myself once a week, Saturdays.  Same goals this week because I totally failed in following through with both of these goals.
  • Affirmation: I am in charge of how I feel and today I am choosing happiness.

Random Thoughts:  I am totally surprised that my body didn’t go through any sugar withdrawals and very thankful that it didn’t.  I have gone through them before and they aren’t all that fun to deal with.  Another great week for me and I am so pleased with the way that I am feeling and how clear my head feels.  I still go through some bouts that I feel like I am out of it but not anywhere near like I was before starting this keto lifestyle.

Norma’s Keto in a Coulee Progress

Norma’s Dinner Journal

I eat my breakfast and a lunch, which usually consists of the same thing everyday so I thought I would only include my dinners in my food journal below.

Sunday – Roast beef dinner with cauliflower and cabbage.

Monday – Portobello Mushroom Pizza.  My rating (Simply Keto cookbook) is 7/10.  I rather enjoyed it but it wasn’t a big hit with my hubby though.  He politely told me that I didn’t need to make them again.  In his defence though, mushrooms are not his favourite.

Raspberry Cream Cheese Fat Bombs.  (Simply Keto cookbook) 10/10.  These were a big hit!  The little bits of raspberries in these fat bombs was beyond amazing.  My tastebuds were jumping for joy after eating these little morsels of pure heaven!  I’m going to see what happens with adding blueberries instead next time.

Tuesday – Made Egg Drop Soup (Simply Keto cookbook) with Caesar Salad.  Our family rating for the soup is 7.5/10 – it didn’t look all that appetizing but the soup itself was rather tasty though.

Wednesday – Leftovers from last night.

Chocolate Avocado Pudding (Simply Keto cookbook).  Rating 10/10.  I thought avocado was an interesting ingredient to use in a pudding so I just had to give this recipe a try.  Oh my, I am truly amazed how delicious this pudding tasted.  Hubby thought it tasted fabulous too and told me I could make this recipe anytime I wanted to.  

Thursday – Chicken and broccoli.

Friday – Salami & cheese quesadilla made with low-carb tortillas. 

Saturday – Lettuce wrapped cheeseburger with caesar salad.

I prepared a Rocket Fuel Latte every morning to take to work with me.  I am not a coffee drinker at all but for some reason I quite enjoy this drink!  The first time I made it though I wasn’t sure if I would make it again. It definitely is growing on me.

  • Weight: ⬇️ 1.6 lbs
  • Start Date:  October 20, 2018
  • Sleep:  I have pretty much tried to close down the computer at 10:00 every evening and I have noticed that I am feeling and getting a little more tired earlier than my normal 2:00 a.m. – I have progressed to 1:00 a.m. – It’s a start! LOL  I just wish that I wouldn’t wake up every hour on the hour after I go to sleep.  So annoying!!
  • Energy Level:  My energy level has definitely improved from last week and I have been a little more active too!
  • Difficulty Level:  So I find if I plan and prepare the difficulty level is rather low but if I don’t then it becomes more of an issue.  There is lots of cooking and preparing.  I have to learn to make time to cook.
  • Goals:  Drink more water!  Only weigh myself once a week, Saturdays.
  • Affirmation: I let go of any guilt I hold around food choices.

Random Thoughts:  I am extremely pleased with my overall progress this week and I have definitely noticed a change in my clothes.  I tried on a sweater this morning that I am extremely happy to say was a little too big for me.

Norma’s Keto in a Coulee Progress

Hello Week Two!  I have just completed two weeks on my new keto lifestyle, and it will be beneficial for me to blog my progress to help me with accountability issues as well as keeping me motivated.  Please feel free to join me or send me some encouraging words!

Norma’s Dinner Journal

I eat my breakfast and a lunch, which usually consists of the same thing everyday so I thought I would only include my dinners in my food journal below.

Sunday – 2 egg omelette with onions and ham.

Monday – Chicken Caesar Salad and Cheese Crisps.  My rating for the Cheese Crisps (Simply Keto cookbook) is 9/10.  They were quite good and would definitely make that recipe again.

Tuesday – Breakfast for dinner tonight!  Made Olivia’s Cream Cheese Pancakes from my Simply Keto cookbook with some bacon, avocado slices and mashed cauliflower.  My rating for the pancakes is 6/10 – not sure if I would make them again.

Wednesday – 2 egg omelette with onions and ham.

Thursday – Date Night, honey & I went out for dinner tonight and I ordered Steak Oscar with Caesar Salad.  It was extremely good and we had a wonderful evening out!

Friday – Lloyd’s work function, bowling.  Ate some salt & pepper wings and crustless pizza.  Over indulged on red wine.

Saturday – Making pork chops for supper this evening.

I wasn’t too creative with my food this past week but I stayed on plan and task though.  My body is in ketosis and I have noticed a difference with my clothes but didn’t really notice a change on the scale though.  I am not discouraged at all though because I do realize that inches are better than weight removed.  I also know that my body drops scale weight every two weeks.  One week might be 0.5 – 1 lb and then the next week I can lose up to 2 – 3 lbs.  So we will see what happens next week.

  • Weight: ⬇️ 0.4 lbs
  • Start Date:  October 20, 2018
  • Sleep:  I still haven’t noticed any difference with my insomnia but I have incorporated a few things into my nightly routine though to see if that helps some.  One thing I have changed is no computer use after 10:00 every night.
  • Energy Level:  My energy level is still about the same.  I am dragging my feet a little bit today though.
  • Difficulty Level:  Moderate!  I really need to prepare and plan.  If I do I find things so much easier.
  • Goals:  NO NIGHT-TIME EATING, NORMA! Don’t forget to prepare a lunch!  Drink water! (My goals are the same this week because I totally failed with preparing and bringing a lunch with me to work.)
  • Affirmation:  You are stronger than you think!

Random Thoughts:  I am still very pleased with my overall progress this past week but I definitely need to prepare and plan more!

Norma’s Keto in a Coulee Progress & Reviews

Hello Week One!  So I thought I would also add some personal information to this review for all of you that might like to join me &/or follow me on my new Keto lifestyle.  It will be beneficial to me to help with accountability issues as well as keeping me motivated.  I have included two reviews below for the books that I am using while on this journey.  Please feel free to join me or send me some encouraging words!

I absolutely love Leanne’s approach! This book is so much fun and interesting to read with lots of useful information. I don’t usually read cookbooks from cover to cover but the creative way that this cookbook is laid out I found so appealing and extremely motivational.

On a whim I picked this book up at Costco as I was really curious about the Keto diet and thought hmmm, I think I’m going to give this Keto lifestyle a try. I have been following this plan for six days now and I am thoroughly impressed with my progress so far and how helpful this book is. It is like a one-stop guide to all things Keto and I absolutely love and appreciate that the plan is totally customizable and tailored to my individual needs.

I found the book to be very informative, simple to follow and understand! And the author is Canadian which makes it a little easier knowing that the ingredients are easily accessible and where to purchase them. I was able to find most of the ingredients with no problem at all. Which is always a plus when following a healthy eating plan.

*** I haven’t tried too many recipes from this book yet as I am using this one as more of a reference guide and getting to know me Keto book.  But, I have tried the Rocket Fuel Latte where I can’t say I liked it too much but I was able to get it down without too much difficulty though.  I am not a coffee drinker so I am sure that definitely had something to do with it.  I am going to try a different variation tomorrow morning to see if I enjoy it a little more.  My mom is also following the Keto diet with me and she loves coffee and didn’t have any problem drinking it!

    • Energy Level:  My energy level throughout the day seems to have improved some.
    • Difficulty Level:  Easy!  I hope I find the rest of the upcoming weeks just as easy as this week has been.
    • Goals:  NO NIGHT-TIME EATING, NORMA! Don’t forget to prepare a lunch!  Drink water!
    • Affirmation:  I deserve to feel and look healthy!

Random Thoughts:  I have been pleasantly surprised in how much I have embraced this lifestyle and actually really look forward to eating and cooking Keto!
